Banana Muffins

Made these Here's how: Switch oven on to 200 c Get twelve paper* muffin cases or twelve silicon* muffin cases ready, in a muffin (deep) pan although a bun tin will do at a pinch. 1 x mug, sugar - any. 1/2 x mug, vegetable/sunflower oil. 2 x eggs (I use large, but med will do.) 3 ripe bananas. - although one extra or one less doesn't matter too much. 3 x tablespoons, milk - for dairy intolerant folk:...

Lemon-Yogurt Muffins

I honestly can't believe how fast this year has flown by! It seems like just yesterday that we were saying "Wow, we're in 2009!" when in a few weeks we'll be saying "Wow, we're in 2010!" As the weeks have gone by, I've been busy catching up with school work and also with my baking. To start off the baking and posting spree, I decided to post these muffins up. This recipe comes from...

Greek yoghurt cake

I fancied something plain this week i.e. no buttercream or fillings. Inspired by the entries for the Iron Cupcake London Spice challenge I decided to jazz up a plain yoghurt cake with some cinnamon. You can make this cake plain i.e. leave out everything in the recipe I label as “optional”. However, I think it does need something adding to it flavourwise – it could be any spice of...

Apple Cupcakes...

Those cupcakes we made for that Wednesday Treat Day not too long ago started a monster in my stomach that has been evil, annoying and loud enough that I caved and made more cupcakes (which we are greedily keeping to ourselves!). I was able to dig into our overflowing apple supply though, which made me feel a little better about making these Apple Cupcakes with Cinnamon-Marshmallow Frosting . It also...

B-day stuff: Chocolate Cake with Whipped Frosting and brunch from The Pink Princess Book

Here is my little Ry-Bear. She turned 5 on October 25th. She loves the carousel, animals and dinosaurs, but sometimes has a thing for pink and princesses, too. When we discussed her b-day cake, her first choice involved pink and princess, but she quickly changed her mind to dinosaurs and green frosting. I asked her multiple times and the dinosaur/green frosting combo was the winner. She wanted to decorate...

Savoury Green Onion Ricotta Muffins

I've made tons of sweet muffins, and I'm starting to get sick of them. So now I'm on to savoury muffins! For me they're a lot more versatile because I can eat them as snacks or as part of a meal. I love that these muffins use ricotta, though I was disappointed to not taste it at all. I guess that makes sense since ricotta doesn't have a strong flavour - though my boyfriend thought they tasted cheesy....

Apple, Oatmeal and Raisin Muffins

Oh the pressure! I'm in charge while Giz is in San Francisco for the Foodbuzz Blogger Festival . I, on the other hand, am stuck in Ottawa in what "feels like" -5 Celcius, at home with a cold (because going to work with a cold might get me excommunicated in times of H1N1 panic) with next to nothing in my cupboards (I shouldn't complain about this last one, since that was the goal). Ok...pity...

Jalapeno Cheddar Corn Muffins

When serving up chili, I love accompanying it with a nice golden cornbread muffin. But a plain cornbread muffin just won't do. For a bit of pizazz, I wanted to include some flavor with the addition of chopped fresh jalapeno peppers and shredded cheddar cheese. I came across this recipe that got some rave reviews and decided to try it as well. It came out wonderfully. Soft, flavorful and leftovers...

Pumpkin Cinnamon Chip Scones...

I love scones…to me, they are like a cross between a muffin and a cookie…they are truly a delectable culinary creation. I tasted my first scone over five years ago at Panera Bread. I ordered it on a whim to accompany a cup of hot tea. The scone was orange flavored and was topped with a lovely glaze. Needless to say I was smitten with them for about a minute...my short lived love affair...

Chocolate and Raspberry Muffin Recipe - Bourke Street Bakery Book

Admittedly, most of the time I suck at baking. But when I suck at something, I'm always determined to better myself. That is where the Bourke Street Bakery book comes in. All the times I've been to Sydney, I'd never heard of BSB until the book was released and all of my Sydney based 'tweeps ' were raving about the book. So, I made my way down to the books shop and checked out the book. Turns out it's...

Mmmmm Pumpkin

I blame Costco. There I was today, minding my own business, headed for the produce section, when I passed a whole end filled with HUGE pumpkin pies..probably 12 inches across or larger. To make matters worse, these enormous pies were less than $6 each. Now all I wanted was to eat pumpkin pie!...or at least something with pumpkin in it. There is no way that Sweetie and I should ever have a pie that...

Vegan Apple Banana Flax Muffins

I made these today and they are SO GOOD! I was actually really surprised. I changed the recipe a bit -- it originally doesn't call for flax, and they used white flour, but I thought I'd make them even healthier. I used honey instead of sugar, too. Here's the recipe, with my changes: 2 cups whole wheat flour 1/4 cup ground flax seeds 4 tsp baking powder 1/2 tsp cinnamon 1/3 cup honey 1 1/2 cups apple...
